In the heart of the Conca d’Oro of Panzano in Chianti, the Gagliole cellar was inaugurated with the 2019 vintage, the result of a vision and an investment that combine innovation, attention to detail, and respect for the location. The hilly position and the Pietraforte facade integrate the cellar into the landscape, blending with the surrounding vineyards without being imposing.

A prominent piece of architecture, designed to accommodate wine unobtrusively, leaving the materials to tell the story. Inside, advanced technology operates in silence to ensure the highest quality standards, in balance with an artisan sensitivity that keeps in mind the essence of the human touch.

This is where Passion for Taste offers its most palpable expression – a blend of technical precision and emotion.

The harvest

The harvest celebrates a year’s dedication by the people who have followed its evolution step by step. A collective expression of presence, care, and shared experience. The harvest takes place only when the grapes have reached full ripeness and maturity. It is performed exclusively by hand, respectfully entrusted to the experts who understand the vineyard and read each individual sign. Each bunch is selected with care, guided by responsibility, then technique. The grapes are placed in small boxes and immediately put in the cellar. This is an intimate journey, where human compassion preserves the integrity of the fruit. The wine begins its journey here, in a caring environment, where quality comes from a mix of knowledge, experience, and sensitivity.

The sorting table
Our wines’ excellence comes from the scrupulous and careful selection of the bunches, where each grape is examined and selected on the sorting table. Foreign bodies are removed manually, leaving only fruit that expresses balance, maturity, and quality. This is a time of deliberate precision, continuing the commitment started in the vineyard, and ensuring the maximum integrity of the grapes.

Fermentation
After the selection process, the grapes enter the fermentation tanks.
At this stage, the wine begins its transformation process, guided by careful and precise choices. Pumping over, punching down, temperature control, and maceration times are followed with sensitivity and experience to enhance the character of the grapes without force.

The refinement
The wines age separately, according to the variety and vineyard of origin, for a period ranging from 12 to 24 months. Wood and concrete are the materials used – wood to support the structure and concrete to preserve finesse and expression. During the aging process, each wine is monitored constantly. The creative process produces elegant, full-bodied, and crisp wines. Every step embraces human action, knowledge, care, and respect for detail.

Library
The future with strong roots in the past.
Our wine vault is on the ground floor of the cellar. A selection of our labels is stored here, from 1993 to today. This is not just a storage space, but a place that holds memories. A silent dialogue between what has been and what is to come, where Gagliole’s past and future meet.
